Katrina’s Seattle Salmon Burger

Ingredients

  • Peanut sauce or Asian sweet chili sauce
  • Freshly ground black pepper
  • 2 Tbs. sesame seeds
  • 1 lb. salmon fillet (use tail or belly)
  • 4 garlic cloves, minced
  • 2 Tbs. grated fresh ginger
  • Kosher salt
  • + 7 more ingredients
    • 4 scallions (green parts only), cut into 1-inch pieces
    • ¼ cup fine dry breadcrumbs
    • 1 Tbs. toasted sesame oil
    • Vegetable oil cooking spray
    • Lettuce leaves
    • 2 Tbs. tamari
    • 4 hamburger buns

Remove the skin from the salmon or have your fishmonger do it for you. Check the fillet over for pin bones and remove any you find with tweezers or needle-nose pliers.
