Maple-Rosemary Salmon Skewers

  • 1 Tbs. fresh lemon juice
  • 1/3 cup pure maple syrup
  • 1-½ lb. skinless salmon fillet, pin bones removed, cut crosswise into strips
  • 1 Tbs. chopped fresh rosemary
  • Oil for the grill
  • 2 tsp. soy sauce
  • ¼ cup grainy Dijon mustard

Prepare a medium-high (400 to 475°F) charcoal or gas grill fire. In a small bowl, whisk the syrup, mustard, rosemary, lemon juice, and soy sauce. Set aside half of the sauce. Thread the salmon onto 10- to 12-inch metal skewers and brush the remaining sauce on the salmon. Set aside for 5 minutes....
