Ingredients

  • 2 ½ cup(s) dry white wine or chicken stock
  • 3 pound(s) salmon fillet - cut into 6 pieces
  • lemon - sliced into thin rings
  • capers for garnish - optional
  • 8 green onion, cut in half
  • 2 bunch(s) fresh tarragon - leaves stripped from the stem
  • SAUCE:
  • + 7 more ingredients
    • 1 cup(s) mayo
    • ¾ cup(s) parsley - regular or flat leaf
    • SALMON:
    • 2 ½ cup(s) water
    • 2 teaspoon(s) Dijon mustard
    • 1/3 cup(s) rice wine vinegar
    • 1 large shallot - cut into chunks

SAUCE: Pick enough tarragon leaves to measure 1/2 cup - not packed. Put in a food processor along with green onions and shallots. Pulse a couple of times. Add in parsley, mayonnaise, rice vinegar and Dijon mustard. Process until smooth. Season with salt and pepper. Sauce may be made a da...
