Ingredients

  • ¼ cup loosely packed fresh mint leaves
  • ½ teaspoon salt
  • 3 lemons, sliced
  • Garnish: lemon slices
  • 8 garlic cloves, divided
  • 6 (6-oz.) 1-inch-thick salmon fillets
  • 3 tablespoons extra virgin olive oil
  • + 2 more ingredients
    • ½ bunch fresh parsley
    • ½ cup loosely packed fresh parsley leaves

1. Process 2 garlic cloves, 1/2 cup parsley leaves, 1/4 cup mint leaves, and 1/2 tsp. salt in a food processor until smooth, stopping to scrape down sides as needed.
