Broiled Salmon with Sweet-and-Sour Cucumbers

  • 2 tablespoons Dijon mustard
  • 8 (6-ounce) salmon fillets (about 1 inch thick)
  • 1 tablespoon brown sugar
  • Sweet-and-Sour Cucumbers
  • ½ teaspoon salt
  • Cooking spray

Prepare broiler. Combine the first 3 ingredients. Brush mustard mixture over fillets. Place fillets, skin sides down, on a broiler rack coated with cooking spray; broil 8 minutes or until fish flakes easily when tested with a fork. Serve fish with Sweet-and-Sour Cucumbers.
