CAJUN SALMON WITH CITRUS SALSA

Ingredients

  • ¼ teaspoon(s) pepper
  • 1 tablespoon(s) dry Cajun seasoning
  • 1 tablespoon(s) fresh cilantro, chopped
  • 1 ½ pound(s) salmon fillet, cut crosswise into six pieces
  • ¼ cup(s) red onion, chopped
  • 2 tablespoon(s) honey
  • 1 tablespoon(s) olive oil

    • 1 - 8 ounce can pineapple slices, drained and diced
    • ¾ teaspoon(s) salt
    • 2 limes

Preheat oven to 350°. Grate 1 tsp. zest from limes. Peel limes and remove segments; chop. Mix together lime segments, pineapple, onion, honey, oil, cilantro, 1/4 tsp. salt, pepper, and lime zest.
