  • 1 small fresh jalapeño chile
  • 8 6-oz pieces salmon fillet with skin (3 lb total)
  • 2 tablespoons whole black peppercorns
  • ¼ cup olive oil
  • 1 teaspoon salt
  • ½ small red onion
  • 4 oranges
  • + 5 more ingredients
    • ¼ cup red-wine vinegar
    • ½ cup fresh cilantro
    • ½ teaspoon black pepper
    • 2 tablespoons fennel seeds
