Couscous herb and fruit salad with salmon


  • 150g/5oz couscous
  • 50g/2oz apricots, diced
  • 50g/2oz sultanas
  • 10g mint, chopped
  • 10g parsley, chopped
  • ½ red onion, finely chopped
  • 1 lemon, juice and zest
  • + 6 more ingredients
    • 1 tsp each of ground cumin, coriander and cinnamon
    • 2 tbsp/30ml/1fl oz virgin olive oil
    • salt and black pepper
    • cooked salmon fillet
    • olive oil
    • pesto (optional)

1. Prepare couscous according to instructions on the packet. Season and cover with cling film to let it steam and cool 2. Once it has cooled, add the other ingredients, stir well and season again. 3. Serve with cooked salmon fillet and a drizzle of olive oil and/or pesto.
