Fillets of Salmon with Tomato Cream

Ingredients

  • 6 (4-ounce) salmon fillets
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground pepper
  • 3 tablespoons all-purpose flour
  • ¼ cup plus 2 tablespoons butter, divided
  • 2 tablespoons vegetable oil
  • Fresh chives (optional)

    • ¼ cup Chablis or other dry white wine
    • ½ cup seeded, diced tomato
    • ½ cup whipping cream
    • 1 tablespoon tomato paste
    • 2 tablespoons chopped fresh chives

Sprinkle fillets with 1/2 teaspoon salt and 1/4 teaspoon pepper; dredge fillets in flour.
