Gravlax (marinated salmon)
Ingredients
- 6 tablespoonsmildvegetable oil (not olive oil!)
- 1 teaspoonvinegar
- 1 teaspoonsugar
- 1 teaspoonDijon mustard
- 3 tablespoonsgermansweet mustard
- 3 tablespoons Swedish mustard or 3 tablespoonsgermansweet mustard
- 1 bunchfresh dill, the stems
- + 4 more ingredients

- ½ teaspoonwhite peppercorns, slightly crushed in a mortar
- 1/3 cupsugar
- ¼ cupsalt (preferably sea salt)
- 2 lbsnorwegiansalmon fillets (of optimum quality)
