Gravlax (marinated salmon)

Ingredients

  • 2 lbsnorwegiansalmon fillets (of optimum quality)
  • ¼ cupsalt (preferably sea salt)
  • 1/3 cupsugar
  • ½ teaspoonwhite peppercorns, slightly crushed in a mortar
  • 1 bunchfresh dill, the stems
  • 3 tablespoons Swedish mustard or 3 tablespoonsgermansweet mustard
  • 3 tablespoonsgermansweet mustard
  • + 4 more ingredients
    • 1 teaspoonDijon mustard
    • 1 teaspoonsugar
    • 1 teaspoonvinegar
    • 6 tablespoonsmildvegetable oil (not olive oil!)
