Rice Salad with Smoked Salmon and Cucumber

  • ½ pound thin-sliced smoked salmon, cut crosswise into 1/2-inch strips
  • 3 tablespoons rice-wine vinegar
  • 1 ½ cups arborio or other short-grain rice
  • 1 ½ teaspoons Asian sesame oil
  • 4 scallions, white bulbs only, minced
  • 2 tablespoons sesame seeds
  • 2 cucumbers, peeled
  • + 5 more ingredients
    • Grated zest of 1 lemon
    • ¾ teaspoon salt
    • 2 teaspoons sugar
    • 1 tablespoon drained bottled horseradish
    • 1 tablespoon cooking oil

1. Bring a medium pot of salted water to a boil. Stir in the rice and cook until tender, 10 to 12 minutes. Drain the rice well and transfer it to a large glass or stainless-steel bowl.
