Roasted Salmon, Bacon and Spinach Salad

Ingredients

  • 1 cup halved cherry tomatoes
  • 4 cups baby spinach leaves
  • 2 tsp grainy mustard
  • 1 tbsp wine vinegar
  • 2 tbsp extra-virgin olive oil
  • ½ cup cooked crumbled bacon
  • ½ tsp pepper
  • + 1 more ingredients
    • 1-½ lb salmon fillets , (4)

Line rimmed baking sheet with parchment paper or grease. Arrange salmon, skin side down and 2 inches (5 cm) apart, on pan. Sprinkle with half of the pepper and the bacon.
