  • 1 tablespoon olive oil
  • 1 cup sour cream
  • ½ cup milk
  • 3 pounds baking potatoes, peeled, cut into 1-inch pieces
  • 4 6-oz. salmon fillets, about 1 1/4 inches thick each
  • ¼ cup finely chopped fresh dill
  • Salt and pepper
