Salmon With Corn-and-Tomato Salsa

Ingredients

  • ¼ teaspoon pepper
  • 2 tablespoons chopped fresh cilantro
  • 1/8 teaspoon salt
  • Cooking spray
  • 1 cup frozen whole-kernel corn, thawed
  • ¼ cup minced red onion
  • 1 cup diced plum tomatoes
  • + 8 more ingredients
    • 2 tablespoons fresh lime juice
    • 1 jalapeño pepper, seeded and minced
    • 4 (6-ounce) salmon fillets
    • Lime wedges (optional)
    • ¼ teaspoon salt
    • 2 tablespoons honey
    • 2 tablespoons white wine vinegar
    • Cilantro sprigs (optional)

Combine first 7 ingredients in a bowl; set aside. Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add corn; cook 2 minutes, stirring occasionally.
