Salt-Crusted Salmon with Fennel and Green Olive Relish

Ingredients
- 2 tsp. olive oil
- Optional aromatics for the cavity: fennel fronds, thin slices of shallots, thin slices of lemon or orange
- 1 recipe Fennel, Green Olive, and Mint Relish
- 4 large egg whites
- 6 cups kosher salt
- 1 whole 2-½ to 3 lb. salmon
Position a rack in the center of the oven and heat the oven to 400°F.
