Ingredients

  • 1 recipe Fennel, Green Olive, and Mint Relish
  • 1 whole 2-½ to 3 lb. salmon
  • 6 cups kosher salt
  • 2 tsp. olive oil
  • Optional aromatics for the cavity: fennel fronds, thin slices of shallots, thin slices of lemon or orange
  • 4 large egg whites

Position a rack in the center of the oven and heat the oven to 400°F.
