Sauteed Salmon on Orange Lentils


  • 3 T white wine or verjuice
  • 2 T lemon juice
  • Flaky sea salt and freshly ground black pepper to taste
  • 4 7-oz salmon steaks
  • olive oil spray
  • ½ c puy-style lentils, rinsed and drained
  • chicken stock, to cover
  • + 8 more ingredients
    • 1 T olive oil
    • 1 onion, finely chopped
    • ½ red bell pepper, finely chopped
    • ½ celery stalk, finely chopped
    • 1 carrot, finely chopped
    • 2 clove garlic, finely chopped
    • ½ c fresh orange juice
    • grated zest of 1 orange
