Seared Salmon with Thai Vegetables

Ingredients

  • 1 tablespoon fresh ginger
  • 2 tablespoons fresh cilantro
  • 2 tablespoons oriental sesame oil
  • 3 tablespoons soy sauce
  • 6 tablespoons rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • + 12 more ingredients
    • 2/3 cup canned unsweetened coconut milk
    • 2 tablespoons vegetable oil
    • 1 cup water
    • 1 teaspoon ground cumin
    • 4 6- to 7-ounce salmon fillets with skin
    • 1 teaspoon mustard powder
    • 1 teaspoon chili powder
    • 1 teaspoon curry powder
    • 1 teaspoon ground coriander
    • 1 cup basmati rice
    • 1 tablespoon butter
    • 1 teaspoon sugar

Mix first 7 ingredients in small bowl to blend. Place salmon fillets, skin side down, on rimmed baking sheet. Sprinkle 1 1/2 teaspoons spice mixture over each fillet.
