Smoked Salmon Omelet

Ingredients

  • 2 pinches kosher salt
  • 1 Tbs. chopped red onion
  • 2 large or extra-large eggs
  • 1 tsp. olive oil
  • 1 tsp. unsalted butter
  • 1 oz. thinly sliced smoked salmon, sliced into 1-inch strips (to yield 2 Tbs. )
  • A few drops fresh lemon juice
  • + 7 more ingredients
    • 4 grinds freshly ground black pepper
    • 2 Tbs. cream cheese, cut into pieces
    • 1 Tbs. chopped tomato
    • 1 Tbs. water
    • ½ tsp. chopped fresh dill
    • 2-½ tsp. chopped fresh dill
    • Several grinds freshly ground black pepper

Season the smoked salmon with the pepper and lemon juice. Proceed with the omelet preparation.
