Smoked-Salmon Quesadillas with Warm Tomatoes and Arugula
Ingredients
- 12 8-inch flour tortillas (not low-fat)
- ¼ teaspoon black pepper
- 1 large (2-burner) cast-iron griddle
- 1 pound cherry tomatoes
- 3 tablespoons extra-virgin olive oil
- 1 small red onion
- 6 ounces cream cheese

- 2 teaspoons fresh chives
- ½ teaspoon fresh lemon zest
- 4 cups arugula leaves
- 2 teaspoons fresh lemon juice
- 1 firm-ripe California avocado
- 1 pound sliced smoked salmon (preferably Nova)
Soak sliced onion in a bowl of ice and cold water 15 minutes, then drain well and pat dry.
