Twice-Baked Salmon Potatoes

Ingredients

  • 3 tablespoons prepared horseradish
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 4 large baking potatoes
  • ½ cup sliced green onions
  • 1/3 cup fat-free milk
  • ½ cup reduced-fat sour cream
  • + 3 more ingredients
    • 1 (4.5-ounce) package hot-smoked salmon
    • ¼ cup (1 ounce) grated fresh Parmesan cheese
    • 3 ½ tablespoons butter, softened

Preheat oven to 450°. Bake potatoes at 450° for 50 minutes or until done; cool slightly. Reduce oven temperature to 400°.
