BBQ Shrimp Po' Boys with Pickled Green Tomatoes

Ingredients

  • 1 ½ pounds large shrimp, peeled and deveined
  • 1 teaspoon salt
  • Creole Barbecue Sauce, divided
  • 2 French baguettes
  • 2 teaspoons pickling spices
  • 1 cup white wine vinegar
  • 6 lettuce leaves
  • + 3 more ingredients
    • 1 tablespoon sugar
    • 2 green tomatoes, thinly sliced
    • 6 tablespoons mayonnaise, plus more for topping

1. Bring first 4 ingredients to a boil in a nonreactive saucepan. Strain and pour over tomato in a medium bowl. Chill at least 1 hour. 2.
