Cajun Corn and Shrimp

Ingredients

  • 2 pounds uncooked medium shrimp, peeled and deveined
  • 1/3 cup chopped green onions
  • 1 (5 ounce) can evaporated milk
  • cayenne pepper to taste
  • 1/8 teaspoon pepper
  • ¼ teaspoon salt
  • 1 tablespoon sugar
  • + 6 more ingredients
    • 1 (10 ounce) can diced tomatoes and green chilies, undrained
    • 2 (16 ounce) packages frozen corn
    • ¼ cup butter or margarine
    • 2 garlic cloves, minced
    • 1 medium green pepper, chopped
    • 1 large onion, chopped

1. In a large skillet, saute onion, green pepper and garlic in butter until crisp-tender. Add the corn, tomatoes, sugar, salt, pepper and cayenne. Cook for 10 minutes or until heated through.
