Ingredients

  • 1 ¼ cups sliced andouille sausage
  • 1 celery rib, chopped
  • ½ medium onion, chopped
  • 2 small plum tomatoes, seeded and chopped
  • ½ medium-size red bell pepper, chopped
  • 1 teaspoon minced garlic
  • 12 large eggs
  • + 6 more ingredients
    • 5 teaspoons butter, divided
    • Hot sauce
    • 1 ½ cups (6 oz.) shredded Monterey Jack cheese
    • Vegetable cooking spray
    • 1 teaspoon Creole seasoning, divided
    • 1 tablespoon chopped fresh parsley
