Cajun Shrimp Potato Chowder

Ingredients

  • 1 t olive oil
  • ½ c chopped onion
  • ½ c chopped red bell pepper
  • 1 ½ lb cubed red potatoes
  • 2 c reduced sodium chicken broth
  • 1 t garlic powder
  • ¾ t dry mustard
  • + 5 more ingredients
    • ½ t each: paprika and salt
    • 1 lb medium shrimp
    • 2 c 2 percent milk
    • 2 T flour
    • 1 ½ c chopped fresh spinach

Heat oil in a Dutch oven over medium-high heat. Add onion and bell pepper, saut 5 minutes. Add potato, chicken broth and seasonings; bring to a boil.
