Camarones Fritoes with Mexican Cocktail Sauce
Ingredients
- 1 large egg white
- 1 (5.5-ounce) bag baked potato chips (such as Lay's)
- 1 ½ pounds medium shrimp, peeled and deveined
- ¼ teaspoon freshly ground black pepper
- ½ teaspoon grated orange rind
- 6 tablespoons ketchup
- Cooking spray

- ½ cup all-purpose flour
- ¾ cup low-fat buttermilk
- ¼ teaspoon salt
- Sauce:
- 1 tablespoon fresh lime juice
- 1 tablespoon hot sauce
- 1 teaspoon prepared horseradish
Preheat oven to 400°. To prepare shrimp, lightly spoon the flour into a dry measuring cup; level with a knife. Place flour in a shallow dish.
