Ingredients

  • 2 tablespoons chopped fresh cilantro
  • ¼ cup thinly sliced fresh basil
  • 1 garlic clove, minced
  • 3 cups shredded red leaf lettuce
  • Rolls:
  • 1 pound medium shrimp
  • 6 ounces uncooked rice noodles
  • + 11 more ingredients
    • 1 teaspoon chile paste with garlic
    • 2 tablespoons sugar
    • ¼ cup water
    • 12 (8-inch) round sheets rice paper
    • 6 cups water
    • Dipping sauce:
    • ¼ cup thinly sliced fresh mint
    • 1 teaspoon minced peeled fresh ginger
    • ¼ cup hoisin sauce
    • 1/3 cup low-sodium soy sauce
    • 2 tablespoons fresh lime juice

To prepare rolls, bring 6 cups water to a boil in a large saucepan. Add the shrimp; cook 3 minutes or until done. Drain and rinse with cold water. Peel shrimp; chill.
