Coconut Rice with Edamame

Ingredients

  • ¾ cup shredded coconut, toasted
  • ½ cup coconut milk
  • 2 cups uncooked jasmine rice
  • 2 small limes, juiced
  • 2 ½ cups water
  • 2 cubes shrimp bouillon
  • salt and ground black pepper to taste
