Ingredients

  • ¼ teaspoon cayenne pepper
  • ¾ cup heavy cream
  • ½ cup Cognac
  • 3 tablespoons all-purpose flour
  • 5 cups water
  • 2 medium bay leaves
  • 5 fresh thyme sprigs

    • 2 medium carrots, large dice
    • 2 medium yellow onions, large dice
    • 4 tablespoons unsalted butter (½ stick)
    • 2 pounds shell-on shrimp
