Creamy Shrimp and Grits
Ingredients
- 8 ounces verjuice or dry white wine*
- ½ cup fresh lemon juice
- ½ cup finely chopped tomato
- Garnishes: julienned prosciutto, crumbled cooked bacon, chopped fresh chives
- 1 tablespoon chopped fresh parsley
- 2 ¾ pounds large shrimp, peeled and deveined (about 64 shrimp)
- 1 cup chicken broth

- 1 cup heavy whipping cream
- 2 tablespoons butter
- 2 garlic cloves, minced
- 1 tablespoon chopped fresh thyme
- 1 cup water
- 1 cup stone-ground yellow grits
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 cup butter, divided
- ¼ cup finely chopped celery
- ¼ cup finely chopped green bell pepper
- ¼ cup finely chopped shallots
- 1 teaspoon chopped fresh thyme
Melt 2 tablespoons butter in a large saucepan. Add garlic and 1 tablespoon thyme; sauté 1 minute. Add broth, whipping cream, and 1 cup water. Bring to a boil; whisk in grits.
