Deviled Shrimp Ragu

Ingredients

  • 1 pound raw shrimp, peeled and deveined, shells reserved
  • 1 tsp vegetable oil
  • 2 cups water
  • 1 bay leaf
  • 2 tbsp brown sugar
  • 1/3 cup ketchup
  • 1 lemon, juiced
  • + 8 more ingredients
    • ½ tsp chipotle pepper
    • 1 tsp smoked paprika
    • 2 clove garlic, minced very fine
    • ½ tsp salt
    • cayenne to taste
    • 1 tbsp olive oil
    • 2 tbsp minced chives
    • 2 tbsp cold unsalted butter

To make the shrimp stock: Add the shrimp shells and vegetable oil to a saucepan, and place over medium-high heat.
