Eggplant and Shrimp Bake

Ingredients

  • 4 tablespoons butter
  • 1 medium eggplant, peeled and cut into 1-inch pieces
  • Salt
  • Freshly ground black pepper
  • 1 cup chopped onions
  • ¼ cup chopped green bell peppers
  • ¼ cup chopped celery

    • ½ pound medium shrimp, peeled and deveined
    • ½ teaspoon dried thyme
    • ½ teaspoon dried oregano
    • 2 tablespoons flour
    • 2 cups water
    • 2 tablespoons chopped parsley
    • 1 cup dried fine bread crumbs
    • 1 cup fried parsnips
    • 2 ½ tablespoons paprika
    • 2 tablespoons salt
    • Cayenne
    • 1 cup grated Parmesan

    • 2 tablespoons garlic powder
    • 1 tablespoon black pepper
    • 1 tablespoon onion powder
    • 1 tablespoon cayenne pepper
    • 1 tablespoon dried leaf oregano
    • 1 tablespoon dried thyme

Preheat the oven to 375 degrees F. In a large saute pan, over medium-high heat, melt the butter. Add the eggplant. Season with salt, cayenne, and black pepper. Saute for 2 minutes.
