Greek Shrimp Bruschetta

  • ¼ cup finely chopped parsley
  • 1 tablespoon fresh lemon juice
  • ½ cup sliced green onion
  • 1 ½ tablespoons minced garlic
  • ¾ pound small fresh shrimp, peeled and deveined
  • 1 teaspoon Greek seasoning
  • 2 large plum tomatoes, seeded and finely chopped
  • + 4 more ingredients
    • 1/3 cup olive oil, divided
    • ½ cup crumbled feta cheese
    • 1 French baguette, cut diagonally into 1/4 inch-thick slices
    • 2 teaspoons minced fresh thyme

Heat 1 tablespoon oil in a large skillet over medium-high heat. Sauté shrimp and garlic 3 to 4 minutes until shrimp are cooked. Transfer to a small bowl and chill.
