Grilled Shrimp with Tomato Salad
Ingredients
- Vinaigrette:
- ½ c white wine vinegar
- 3 T orange juice, freshly squeezed
- 1 T lemon juice, freshly squeezed
- ¼ c olive oil
- 1 T whole-grain mustard
- 2 garlic cloves, pressed

- 2 t chopped cilantro
- 1 T honey
- Shrimp:
- 2 T olive oil
- 2 garlic cloves, finely minced
- ¼ t red pepper flakes
- 12 jumbo shrimp, peeled and deveined, tails intact
- ½ t salt
- White pepper
- Tomato Salad:
- 2 beefsteak tomatoes
- 4 Roma tomatoes
- 12 red grape tomatoes, cut into halves
- 12 yellow pear tomatoes, cut into halves
- ½ t salt
- Freshly ground black pepper
- 4 T basil, cut into thin ribbons
