Gumbo 2
Ingredients
- 2 tablespoon(s) salt
- ½ tablespoon(s) Red Pepper
- 1 cup(s) bell pepper, chopped
- 2 pound(s) medium shrimp (or crab, chicken, sausage, crawfish tails, wild duck or goose-whatever suits your fancy)
- 1 teaspoon(s) file, optional or season to your taste
- 1 cup(s) green onion, chopped
- 2 stalk(s) celery, chopped

- 4 quart(s) water
- 1 cup(s) flour
- ¾ cup(s) cooking oil
Mix oil and flour in a heavy skillet to make roux. Cook until medium dark brown, stirring mixture constantly. This takes about 40 to 50 minutes on the stove.
