  • 1 cup(s) bell pepper, chopped
  • 2 pound(s) medium shrimp (or crab, chicken, sausage, crawfish tails, wild duck or goose-whatever suits your fancy)
  • 1 teaspoon(s) file, optional or season to your taste
  • 1 cup(s) green onion, chopped
  • 2 stalk(s) celery, chopped
  • + 4 more ingredients
    • 2 onions, chopped
    • 4 quart(s) water
    • 1 cup(s) flour
    • ¾ cup(s) cooking oil

Mix oil and flour in a heavy skillet to make roux. Cook until medium dark brown, stirring mixture constantly. This takes about 40 to 50 minutes on the stove.
