Marinated Shrimp 5

Ingredients

  • 1 clove(s) garlic
  • 1 pound(s) cooked shrimp
  • 2 tablespoon(s) olive oil
  • 1 tablespoon(s) lemon juice
  • 2 tablespoon(s) fresh basil
  • 3 tablespoon(s) green part of scallion (green onion)
  • 1 jar(s) marinated artichoke hearts (6 oz. jar)

Drain artichoke marinade into a bowl. Finely chop artichoke hearts, green onions, garlic and basil and add to marinade. Add lemon juice, olive oil and shrimp. Mix well. Marinate at least one hour, but preferably overnight. Serve over fresh tomato slices, avocado slices or on a bed of lettuce.
