Marinated Shrimp and Mango Salad

Ingredients

  • 2 lb large peeled raw shrimp (or thawed and completely dried)
  • 1 t canola oil
  • 2 bunch (8 cups) watercress
  • 1 c packed fresh coriander (cilantro) sprigs
  • 2 sweet red peppers, cut into thin strips
  • 2 large ripe mangoes, peeled and cut into thin strips
  • Shrimp Marinade:
  • + 12 more ingredients
    • 2 t each ground cumin, ground coriander and paprika
    • 2/3 c low-fat plain yogurt
    • 2 T minced ginger root
    • 1 T minced fresh garlic
    • 2 fresh jalapeno peppers, seeded and chopped, or 1 tbsp chopped bottled peppers
    • Grated rind of 1 lime
    • ¼ t salt and freshly ground pepper
    • Dressing:
    • ½ c mango chutney
    • 1/3 c fresh lime juice
    • 3 T canola oil
    • 1 dash hot pepper sauce

Shrimp Marinade: In small nonstick skillet, dry-roast cumin, coriander and paprika over medium heat, stirring occasionally, for about 2 minutes or until darkened slightly and fragrant.
