Mediterranean Pasta with Shrimp and Capers

Ingredients

  • 1 tablespoon olive oil
  • ¾ cup (½-inch) sliced green onions
  • 4 garlic cloves, minced
  • 6 cups chopped tomato (about 2 pounds)
  • 1 tablespoon tomato paste
  • 1 tablespoon capers
  • ½ teaspoon salt
  • + 5 more ingredients
    • 1 pound large shrimp, peeled and deveined
    • 2 tablespoons chopped fresh or 2 teaspoons dried oregano
    • 5 cups hot cooked angel hair (about 10 ounces uncooked pasta)
    • 5 tablespoons (1 ¼ ounces) finely crumbled feta cheese
    • ¼ teaspoon freshly ground black pepper

1. Heat oil in a large nonstick skillet over medium-high heat. Add onions and garlic, and sauté 2 minutes. Add tomato, and cook over medium heat 7 minutes. Add tomato paste, stirring well to combine.
