Mint-Marinated Shrimp with Tabbouleh, Tomatoes, and Feta
Ingredients
- 1 ½ cups water
- 2 cups medium or coarsely cracked bulgur
- 1 garlic clove
- 2 green onions
- ½ cup crumbled feta cheese
- ½ cup arugula
- 2 teaspoons coarse kosher salt

- 20 cooked peeled deveined large shrimp with tails intact
- 6 tablespoons fresh mint
- 7 1/3 tablespoons olive oil
- 10 tablespoons fresh lemon juice
