Mint-Marinated Shrimp with Tabbouleh, Tomatoes, and Feta

Ingredients

  • ½ cup arugula
  • 10 tablespoons fresh lemon juice
  • 7 1/3 tablespoons olive oil
  • 6 tablespoons fresh mint
  • 2 green onions
  • 1 garlic clove
  • 2 cups medium or coarsely cracked bulgur
  • + 5 more ingredients
    • 1 ½ cups water
    • 20 cooked peeled deveined large shrimp with tails intact
    • 3 plum tomatoes
    • 2 teaspoons coarse kosher salt
    • ½ cup crumbled feta cheese
