Potted Shrimp


  • 1 bay leaf
  • crackers or Melba toast
  • 4 ounces cream cheese
  • 3 tablespoons medium-dry Sherry
  • 2 tablespoons fresh chives
  • ½ pound shrimp, shelled and deveined
  • 6 tablespoons unsalted butter
  • + 2 more ingredients
    • ½ cup shallots
    • 1 tablespoon fresh lemon juice

In a large skillet cook shallots with bay leaf in 1 tablespoon butter over moderate heat, stirring, until soft.
