Roasted Tomatoes with Shrimp


  • 1 ½ pound(s) medium shrimp, peeled and deveined
  • 5 tomatoes cut into eighths (large)
  • 3 tablespoon(s) olive oil
  • 2 teaspoon(s) minced garlic
  • ¾ teaspoon(s) kosher salt
  • ½ cup(s) chopped parsley
  • 2 tablespoon(s) lemon juice

    • ¾ teaspoon(s) black pepper
    • 1 cup(s) Feta cheese, crumbled

Preheat oven to 450 degrees. Place tomatoes in a large baking dish. Spoon the olive oil and garlic over the tomatoes. Sprinkle with salt and pepper and toss.
