Scrumptious Shrimp with Artichokes

  • 1 (14-ounce) can quartered artichoke hearts, drained
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • ¼ teaspoon salt
  • 1 ½ tablespoons dried red pepper flakes
  • 1 teaspoon paprika
  • + 2 more ingredients
    • 2 cups diced tomatoes
    • 2 tablespoons chopped fresh flat-leaf parsley

Heat oil in a large nonstick skillet over medium-high heat. Add shrimp, pepper flakes, and garlic; sauté 3 minutes. Add remaining ingredients; cook 3 minutes, stirring frequently, or until shrimp are done and mixture is thoroughly heated.
