Ingredients

  • ¼ pound sea scallops, tough muscle removed from side of each
  • ¼ pound large shrimp in shell (21 to 25 per lb), peeled, deveined
  • 1 ½ tablespoons fresh mint
  • 4 Bibb or 2 heads Boston lettuce (1 1/4 lb)
  • 1 navel orange
  • 1 ½ tablespoons red onion
  • 3 teaspoons fresh jalapeño chile
  • + 6 more ingredients
    • ½ cup watermelon
    • 10 tablespoons fresh orange juice
    • ½ teaspoon fresh ginger
    • ½ teaspoon salt
    • ¼ pound cooked lobster meat
    • ¼ cup fresh lime juice

Cut peel and white pith from orange with a sharp paring knife, then cut segments free from membranes. Chop enough segments to measure 1/4 cup.
