Shrimp and Broccoli Fried Rice with Toasted Almonds

Ingredients

  • 1 ¼ pounds large shrimp, peeled and deveined
  • 1 large red bell pepper, chopped (about 1 1/3 cups)
  • 2 tablespoons roasted peanut oil, divided
  • ¼ cup sliced almonds, toasted
  • 4 cups broccoli florets
  • 1 ¾ cups water, divided
  • 3 tablespoons low-sodium soy sauce
  • + 6 more ingredients
    • 1 ½ cups instant white rice (such as Minute Rice)
    • ½ cup fat-free, less-sodium chicken broth
    • 1 teaspoon grated peeled fresh ginger
    • ¼ cup chopped green onions
    • 3 garlic cloves, minced
    • 1 teaspoon cornstarch

1. Place 1 1/2 cups water in a medium saucepan; bring to a boil. Add rice to pan; cover, reduce heat, and simmer 5 minutes. Remove pan from heat; let stand 5 minutes.
