Ingredients

  • ¼ cup chicken stock or low-sodium chicken broth
  • 1 jalapeño
  • 4 large eggs
  • 1 tablespoon fresh tarragon
  • ½ cup tasso, andouille sausage, or bacon
  • 1 tablespoon vegetable oil
  • 3 garlic cloves, sliced
  • + 9 more ingredients
    • 2 tablespoons butter
    • ¼ cup beer
    • 1 cup yellow grits (not instant)
    • 1 tablespoon unsalted butter
    • ¼ cup heavy cream
    • Kosher salt
    • freshly ground black pepper
    • 1 cup sharp white cheddar
    • 16 large shrimp

Bring 3 cups water to a simmer in a large saucepan. Gradually whisk in grits. Turn heat to low; gently simmer until grits begin to thicken.
