Shrimp And Red Pepper Stir-Fry

Ingredients

  • ¼ teaspoon garlic powder
  • 1 cup fat-free, less-sodium chicken broth
  • 3 tablespoons reduced-sodium soy sauce
  • 2 teaspoons vegetable oil, divided
  • 4 cups hot cooked long-grain rice
  • 1 red bell pepper, cut into 1-inch pieces
  • ¾ pound medium shrimp, peeled and deveined
  • + 6 more ingredients
    • 1 tablespoon cornstarch
    • ½ teaspoon ground ginger
    • ¼ teaspoon dried crushed red pepper
    • 1 ½ teaspoons sugar
    • 1 large onion, cut into 8 wedges
    • 1 cup small broccoli florets

Combine first 7 ingredients in a medium bowl; set aside. Heat 1 teaspoon oil in a large skillet over high heat. Add shrimp, and sauté 3 minutes. Remove shrimp from pan; keep warm.
