Shrimp and Rice Florentine
Ingredients
- 1 (5-ounce) package yellow saffron rice
- 1 c chopped onion
- 1 t minced garlic
- 1 ½ lb medium shrimp, peeled
- 1 (10 3/4-ounce) can reduced fat cream of mushroom soup
- 1 c shredded reduced-fat Monterey Jack cheese
- 1/3 c dry sherry
- + 5 more ingredients

- 1 (8-ounce) can sliced water chestnuts, drained
- 2 (10-ounce) packages frozen chopped spinach, cooked and drained
- ¼ c grated Parmesan cheese, divided
- Salt and pepepr
