Shrimp-Stuffed Eggplant–Hacked with notes


  • garnish: extra slices of gouda, whole basil leaves

    • 1 small yellow onion, chopped
    • 1/3 lb. fresh shrimp, peeled & chopped
    • 2 baby eggplants, halved lengthwise
