Shrimp Stuffed Poblano Peppers

Ingredients

  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh cilantro, chopped
  • 1 roasted red pepper, chopped fine
  • ¾ cup monterey jack cheese, grated
  • ¾ cup chihuahua cheese or ¾ cup monterey jack cheese, grated
  • ¾ cup milk
  • ½ cup half-and-half
  • + 7 more ingredients
    • ¼ teaspoon cayenne pepper
    • 1 ½ tablespoons all-purpose flour
    • 5 garlic cloves, minced
    • ½ teaspoon salt
    • 1 lb medium shrimp, chopped
    • 2 tablespoons olive oil
    • 8 poblano peppers
