Ingredients

  • 7 bay leaves (not California)
  • 1 cup vegetable oil
  • 2 pounds medium shrimp, peeled and deveined
  • 1 teaspoon celery seeds
  • 1 teaspoon salt
  • ½ cup celery
  • ¼ cup capers
  • + 6 more ingredients
    • soft green-leaf lettuce such as Boston
    • 1 teaspoon black pepper
    • ¾ cup white-wine vinegar
    • 1 cup onion
    • 2 firm-ripe California avocados
    • ½ teaspoon Tabasco

Cook shrimp in a 5-quart pot of boiling salted water* until just cooked through, 2 to 3 minutes, then drain in a colander.
