Shrimp with Chile and Mint

Ingredients

  • 3 tablespoons vegetable oil, divided
  • 1 ½ pounds shrimp, peeled, deveined
  • 1 Fresno chile or red jalapeño, seeded, thinly sliced
  • Kosher salt, freshly ground pepper
  • ¼ cup fresh lime juice
  • 2 tablespoons fish sauce (such as nam pla or nuoc nam)
  • 1 teaspoon honey
  • + 2 more ingredients
    • 1 cup torn mint leaves
    • ¼ cup salted, roasted peanuts, crushed
